Crustless Smoked Ham Broccoli and Brie Quiche

This crustless quiche is super easy recipe, loaded with rich smoked ham, organic broccoli and creamy brie throughout, then topped with fresh dill, so delicious! It is a perfect weekday breakfast or dinner!

I love quiche for many reasons and yes because how delicious they are but they are so versatile and the ingredients are endless. They really are great to use up leftovers and in this case, I had leftover ham from our Easter celebration, then pulled out what vegetables from the refrigerator, including organic broccoli, scallions and brie was a mild cheese I was after since the smoked ham would dominant the flavour in this quiche. 

WHAT IS A QUICHE TART?

Quiche is a French tart that consists of a pastry crust filled with savory ingredients that includes vegetables, cheese, meat, seafood, and an egg custard. I will often make a quiche when I can use local vegetables, and if I add any meat, it’s usually bacon, most commonly known as Quiche Lorraine. This dish is known worldwide and that are hundreds of variations, that makes this so delicious and versatile. The beauty of this quiche is you can serve it at breakfast, brunch, lunch or dinner. 

WHAT INGREDIENTS YOU WILL NEED FOR THIS QUICHE

  • HAM: since I was using leftover smoked ham, other options are black forest ham, honey glaze ham or substitute it for bacon, Canadian bacon which is a lean bacon, turkey bacon or pancetta
  • BROCCOLI: I used organic broccoli for this recipe, or broccoli florets or broccolini
  • SCALLIONS: this recipe only calls for one chopped scallion and I have added shallots to my recipes as well
  • BRIE: a mild cheese for this recipe was a perfect balance with the bold smoky flavour from the ham
  • EGGS: recommend free-range large eggs
  • CREAM: half and half cream is enough rich and creaminess however, you can add half cream and half 2% milk
  • DILL: love dill in this quiche for it’s fresh citrus flavour
  • SEASONINGS: sea salt and pepper

This gorgeous quiche is perfect for the Spring when you can add a variety of seasonal vegetables. Make this ahead and simply warm it in the oven at 325 degrees fahrenheit for 15 minutes covered with foil. Check it at that time to make sure it’s warmed through. 

HOW TO MAKE THIS DELICIOUS QUICHE

Spread evenly the ham, broccoli, and scallions to the ceramic tart dish. In a medium bowl, beat together eggs, cream, salt and pepper. The place the tart dish on a baking sheet, then slowly pour in the egg mixture into the tart dish and place the brie evenly throughout and add dill.

Bake for 45 minutes, or until knife inserted in the center and comes out clean. Allow to cool a few minutes before serving. Enjoy with a salad or on it’s own for breakfast or brunch. 

It doesn’t take a lot of ingredients to create a super delicious quiche. Serve with a salad or slices of tomatoes to accompany this delicious quiche. 

HELPFUL SUGGESTIONS

Always a good idea to place your tart or pie dish on a baking sheet before adding the egg mixture. I am talking from experience and by placing it on a baking sheet will catch any spills that may happen when lifting it into the oven. 

When it comes to storing quiche, it will last up to 3-4 days in the refrigerator covered tightly with plastic wrap. For any extra pieces, it will keep in the freezer for up to 3 months. Place it in a ziplock freezer bag and wrap the pieces individually.

Equipment

  • 9 inch (23 cm) ceramic tart dish
  • large baking sheet

Ingredients
  

  • 1 cup smoked cooked ham, roughly diced
  • ¾ cup broccoli, chopped
  • 1 scallion, chopped
  • 2/3 cup brie, remove rind and dice ( approx. 5 oz)
  • 6 large eggs, beaten
  • 1 cup half and half cream
  • ½ tsp. salt
  • 1/8 tsp pepper
  • 2 tbsp dill, chopped, extra for garnishing
  • scallions and grape tomatoes, sliced for garnishing

Instructions
 

  • Heat oven to 350°F.
  • Chop and dice the ham, broccoli, scallions, brie and set aside.
  • In a medium bowl, beat together eggs, cream, salt and pepper.
  • Place the tart dish on a baking sheet, then add the scallions, broccoli and ham evenly into the dish. Then slowly pour in the egg mixture into the tart dish and place the brie evenly throughout and add dill.
  • Bake for 45 minutes, or until knife inserted in the center and comes out clean.
  • Let cool for 5-7 minutes before serving and garnishing with dill, scallions or grape tomatoes. Enjoy!
