This delicious chicken one-pan recipe is made with homemade tomato sauce with fresh garlic, fresh oregano and basil. This healthy dish can be eaten on it’s own or with pasta. This recipe serves a dinner for two.
After making fresh homemade tomato sauce today, this dish was a no-brainer. When you have fresh delicious ingredients, you want to keep it simple. This rich, bold, fresh and flavourful dish can be enjoyed on it’s own with vegetables, rice or adding a pasta of your choice.
Super easy recipe to make:
Season boneless skinless chicken breasts, and skin-on chicken breasts or thighs, can be easily substituted, using a cast iron pan pan-sear the chicken pieces in olive oil and butter, then transfer to a plate. Sauté the shallots, garlic and coloured peppers for a couple of minutes. Once the tomato sauce is added, then return the chicken to the skillet to finish off the cook process.
Note: The tomato sauce I used for this recipe is the Homemade Canned Tomato Sauce, and not everyone has a jar of this in their pantry or cold cellar. I have mentioned in my recipe that you can substitute this homemade sauce for crushed tomatoes, my favourite is Muir Organic and add another clove of garlic and double the basil for this recipe.
If you so desire to make homemade tomato sauce, I would suggest to use a food processor method I have mentioned in detail in my Homemade Canned Tomato Sauce recipe. All it requires you to do add scored tomatoes to a pot of boiling water for 30 seconds, and once cooled then add to food processor to create a liquid. This will require to simmer at a low boiling point for a couple of hours.
Recipe Ingredients:
Chicken: I used boneless and skinless chicken breasts for this recipe, the chicken was tender and moist; can easily substitute chicken thighs
Seasonings: salt and pepper
Olive oil and butter: added both for searing, and flavour
Shallot: has a mild onion flavour
Garlic: I added only two cloves since my homemade tomato sauce had garlic already added; you can add another clove or two if you like
Peppers: add only coloured for sweetness and colour
Homemade sauce: since I used my recipe: Homemade Canned Tomato Sauce; I have suggested you can substitute 14 zo can of crushed tomatoes to replace my homemade tomato sauce recipe
Tomato paste: adds a thickness to this sauce and binds the sauce
Herbs: I used fresh basil, oregano and parsley, you can substitute dried basil and oregano; I suggest to use fresh parsley, and fresh basil if all possible
Parmesan cheese: just enough for a cheesy flavour
Easy Garlic Chicken Breast with Homemade Tomato Herb Sauce

- cast iron skillet or heavy bottom skillet
Ingredients
- 2 boneless, skinless chicken breasts (8 oz per chicken breast)
- salt and pepper to season the chicken
- 1 tbsp extra virgin olive oil
- 1 tbsp unsalted butter
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1/2 red bell pepper, sliced in strips
- 1/2 yellow/orange pepper, sliced in strips
- 14 oz homemade tomato sauce (substitute 14 oz can crushed tomatoes)
- 2 tbsp tomato paste
- 1 sprig of oregano (1 tsp of dried can be substituted)
- 2 tbsp fresh basil leaves, sliced (1 tbsp of dried can be substituted)
- 2 tbsp Parmesan cheese
- 2 tbsp fresh parsley, chopped for garnishing
- 2 tbsp fresh basil, sliced for garnishing
Instructions
- Prepare a pasta of your choice, according to the instructions on the package if you decide to serve this dish with pasta.
- Season the chicken breasts with salt and pepper. Heat oil and butter in a heavy-bottom skillet or cast iron skillet. Add the chicken breasts and sauté over medium-high heat, for about 5 minutes on each side, turning over once the chicken is browned, and transfer to a plate.
- Reduce heat, and add garlic, and shallots and sauté for about a minute. Then add peppers and sauté for a couple of minutes. Add the tomato sauce, tomato paste, and cook for 15 minutes. The last 5-7 minutes return chicken to the skillet and add the fresh oregano and basil.
- Grate Parmesan cheese over the chicken, and garnish with fresh parsley and basil.
- Serve on it's own or with pasta.

How to make this recipe:
This homemade tomato sauce I make every year and it required 3 1/2 to 4 hours of simmering. I have mentioned you can easily substitute, this sauce for crushed tomatoes in my recipe, as well, if you don’t have fresh herbs, add dry and I have also mentioned in my recipe for substitution.
