Goat Cheese Crostini with Honey and Pomegranate

A festive holiday appetizer with creamy goat cheese, vibrant pomegranate, chopped walnuts with drizzled honey makes these crostini so delicious.

When we are needing an easy appetizer that will impress our guests, these yummy crostini’s will guarantee to do that! I wanted to keep it simple, and if I could I would add goat cheese to everything! It can be added to so many dishes to add that extra punch and creaminess.  

I recommend using good quality honey when entertaining and serving food or appetizers for the holidays. I will always suggest checking out your local producers as many countries offer such lovely and delicious honey. I used Greek honey in recipe and I also have used a local honey producer (Beaver Creek) as well. 

FEW SIMPLE INGREDIENTS

  • french baguette
  • extra virgin olive oil
  • goat cheese
  • cream cheese
  • pomegranate
  • honey
  • walnuts 
  • fresh rosemary

WHEN MAKING THIS RECIPE

Use a good quality extra virgin olive oil for this recipe. I recommend a good quality evoo. I used a Greek extra virgin olive oil and it’s perfect for these crostini’s, it’s light, not greasy, smooth with a velvety texture. When you are making crostini appetizers, you want to use quality ingredients, so your appetizer will taste phenomenal! 

I decided to add cream cheese to this recipe, to add that extra creaminess to the spread. However, if you prefer to use only goat cheese, then double your amount to 8 ounces and you don’t need to whip it in the food processor. Simply stir it in a bowl to soften the goat cheese, and spread it on the crostini. 

HOW TO MAKE THESE TASTY CROSTINI'S

  1. Slice the baguette to ½ inch slices and brush each slice with olive oil on both sides using a pastry brush. 
  2. Whip: the goat cheese, cream cheese and salt in a food processor. Pulse until well blended and creamy.
  3. Bake: crostini’s in oven 350° for 15 minutes until golden, turning them over halfway through. Remove and allow to cool before assembling.
  4. Assemble: spread 1-2 tablespoon of cheese mixture on each crostini, then add the pomegranates, chopped walnuts, and drizzle with honey.
  5. Serve: warm and enjoy!!

Ingredients
  

  • 1 1 baguette
  • 1/4 cup extra virgin olive oil
  • 4 oz goat cheese
  • 4 oz cream cheese
  • pinch of salt
  • 1/4 cup pomegranate seeds/arils
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup honey
  • 1-2 sprig of fresh rosemary

Instructions
 

  • Preheat oven to 350°F.  
  • Slice the baguette to ½ inch slices and arrange them on a baking sheet. Brush each slice with olive oil on both sides using a pastry brush. Bake for 15 minutes until golden, turning over halfway. Remove and cool on rack before assembling.
  • In a food processor, add goat cheese, cream cheese and salt. Pulse until well blended and creamy.
  • Once the crostini’s are cool, spread 1-2 tablespoon to each crostini, then add the pomegranates, chopped walnuts, and drizzle with honey. Serve warm.

FESTIVE HOLIDAY APPETIZER

Making ahead:  I would suggest to make the whipped goat cheese the day before and store in the refrigerator covered. For best results, for the crostini’s is baking them the same day and once cooled wrap them to avoid drying out. Baking the day or two before is an option, however, you can warm them in the microwave, covered in paper towel for about 10 seconds, this will soften them or place in the oven on a baking sheet at 350 degrees Fahrenheit for about 10-15 minutes for a crispy texture.

    Could you make these ahead of time? Or could you make the goat cheese topping and refrigerate, assemble upon guests arrival?

      Hi Maggie,
      Yes you can! I made my crostini’s the day before, and had my goat cheese whipped and ready in the refrigerator. What you will notice, is the crostini’s will start get and hard if sitting too long. Make sure you put them in a zip-lock bag and warm them before assembling, in the microwave wrapped in paper towel for about 10 seconds. Honestly, to get the best results is making the crostini’s the same day. Hope this helps, and enjoy!

      I wanted to mention as well, by making the crostini’s the day or two before, and placing them in the microwave will soften them. Also, another option for a crispy crostini is place in the oven on a baking sheet at 350 degrees Fahrenheit for about 10-15 minutes.
