Greek-Style Chicken Kebabs

These tender and moist chicken pieces are marinated in a blend of Greek flavours and grilled to perfection! Serve it up with Greek salad and tzatziki sauce. 

Greek Night! A perfect summertime meal with lots of flavour and garlic! I have included a Greek salad and Tzatziki sauce recipes in my blog as well. You can serve it up with pita bread or rice. In this particular recipe I made fried rice but basmati rice works as well. I added chicken broth and green onions to my fried rice. 

SIMPLE AND DELICIOUS INGREDIENTS

Chicken Breasts: I like to use organic or hormone and antibiotic free chicken 

Garlic: the Greek’s love garlic and so do I 🙂

Extra virgin olive oil: is important for good quality olive oil, and Greece is one of the countries that make an excellent olive oil

Lemon juice: adds a citrus tang and lemon is often added in Greek recipes

Oregano: is a very popular herb in Greece and it grows wild; a close Greek friend of mine brought back some for me and it was out of this world! 

Seasonings: salt and pepper 

WHAT MAKES THESE KEBABS SO DELICIOUS

Where do I begin…..first and foremost it’s the quality of ingredients. When you combine good quality ingredients in any recipe, your results will be worth every bite!! To marinate the chicken, I used good quality Greek extra virgin olive oil, fresh garlic, lemon juice, Greek oregano, Himalayan salt and pepper. It’s important to cook with fresh good quality poultry. I only use hormone and antibiotic free meat and sometimes organic meat. I grew up eating that way, and that’s seems to be only meat I will eat. I can tell the difference in flavour and some would say that’s impossible, but I believe it’s personal preference. 

With these delicious, juicy and tender chicken kebabs, you need to serve them up with my delicious Greek Salad and Tzatziki

HOW TO MAKE THIS DELICIOUS RECIPE

Marinate: The few ingredients needed for this recipe but if you have good quality ingredients, the flavors are already there. A close Greek friend of mine Anna K. brought me oregano from Greece and it has such wonderful fragrance. She was telling me it grows wild, so there is an abundance of oregano throughout the countryside. As well, Gaia Fine Foods have a beautiful fragrant oregano. 

Cut chicken breasts into chunks and place in a bowl or zip lock bag. Whisk together garlic, olive oil, lemon, oregano, salt and pepper in a liquid measuring cup and add to chicken and thoroughly blend the marinate with the chicken and refrigerate for minimum 2 hours up to 6 hours.

Grilling: Whether you use an indoor or outdoor grill, it’s important the grills are sprayed or brushed with oil to prevent from the chicken from sticking to the grill and make sure the grill is HOT! While grill is heating, thread the chicken onto skewers and place on a barbecue or indoor grill for approximately 8-10 minutes, turning once halfway.

FAQ

Can I make these chicken kebabs with an indoor grill? Absolutely, if you use good quality ingredients and the only difference is you won’t get the smoky flavour like you would on a bbq. But it will still be very delicious!

Can I use chicken thighs for this recipe?  Yes, chicken thighs can be easily replaced and since it’s the dark meat of the chicken, it will be more tender and flavourful.

Ingredients
  

  • 2 (1 1/2 lb) chicken breasts (organic/hormone & antibiotic free)
  • 2 cloves garlic, minced
  • 1/4 cup good quality extra-virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp Greek oregano
  • 1/2 tsp Himalayan salt
  • black pepper

Instructions
 

  • Cut chicken breasts into chunks and place in a bowl or zip lock bag. Whisk together garlic, olive oil, lemon, oregano, salt and pepper in a liquid measuring cup and add to chicken and thoroughly blend the marinate with the chicken and refrigerate for minimum 2 hours up to 6 hours.
  • Meanwhile, prepare the tzatziki and Greek salad, since these are the best sides with these chicken kebabs.
  • Heat grill and spray or brush vegetable oil on the grates to avoid the chicken from sticking. While grill is heating, thread the chicken onto skewers and place the kebabs on a HOT barbecue or indoor grill for approximately 8-10 minutes, turning once halfway.
  • Remove chicken from the grill and serve with Greek salad and Tzatziki and rice if you desire.
