Bring on the summer grilling with these super easy salmon kabobs with a Mediterranean marinade that makes them so tender and delicious. These scrumptious salmon kabobs are ready in less then 40 minutes. Indoor grilling is always an option!
Ohhh what a delicious recipe!! For this recipe, I marinated the cut salmon fillets for 20 minutes and added some local fresh vegetables. The marinade is Mediterranean inspired, fresh, garlicy with herbs and not to mention this dish is so light and healthy!
This recipe can be served on it’s own for a light lunch or dinner. If you want to add a side to the dish, roasted rosemary potatoes, light olive oil and lemon pasta, basmati rice, couscous or quinoa.
I decide to add vegetables that work well with the salmon and while the salmon is marinating, slice your vegetables and add them to the marinated salmon the last few minutes for additional flavours to the vegetables.
INGREDIENTS
Salmon fillet: with or without skin, remove the skin if attached
Marinade:
- lemon juice
- extra virgin olive oil
- garlic
- dried oregano
- fresh rosemary
- Himalayan salt
- black pepper
The tzatziki sauce recipe makes a perfect condiment with this Mediterranean flavours. Simply add 1 tablespoon of fresh dill to the tzatziki sauce.
HOW TO MAKE THIS SUMMER RECIPE
START WITH THE MARINADE
In medium bowl, whisk together lemon juice, olive oil, garlic, oregano, ginger, rosemary, salt and pepper. Remove the skin from the salmon fillet and cut the salmon into 1 inch cubes.
Remove the skin of the salmon with a sharp knife and discard. Cut the salmon into1 inch cubes. Add the cut salmon cubes to the marinade and stir gently until the salmon is well coated. Marinate for 30 minutes or up to 2 hours.
Using a large bowl, toss and coat vegetables with olive oil, lemon juice, oregano, salt and pepper.
Heat the grill, while grill is heating, arrange and thread the salmon and vegetables onto skewers. Lightly spray the grill and place on hot barbecue or indoor grill for approximately 8 minutes, 4 minutes on each side, turning once halfway.
Remove the salmon skewers from the grill. Serve with my Homemade Tzatziki Sauce or store bought works too. Serve with basmati rice, roasted lemon potatoes or salad. Enjoy!
I used metal skewers, which can be used over again and easy to clean and if you use wooden skewers, they need t be soaked in water for 30 minutes and only use them once.
To avoid salmon cubes from falling off, make sure they are cut to 1 inch and thread them on with the vegetables securely and in the center of the salmon cubes and veggies.
This is a super easy recipe and it works so well with a crowd, prep the skewers before the company arrives and have them ready. Drizzle some of the marinade over them on a baking sheet once they have been marinating for 30 minutes.
