Bring on the summer grilling with these super easy salmon kabobs with a Mediterranean marinade that makes them so tender and delicious. These scrumptious salmon kabobs are ready in less then 40 minutes. Indoor grilling is always an option!

I have always grilled salmon fillets and this time by marinating the salmon and vegetables they have an abundance of delicious, and fresh Mediterranean flavours and not to mention this dish is so light and healthy!
This recipe can be served on it’s own for a light lunch or dinner. If you want to add a side to the dish, roasted rosemary potatoes, light olive oil and lemon pasta, basmati rice, couscous or quinoa.
I decide to add vegetables that work well with the salmon and while the salmon is marinating, slice your vegetables and add them to the marinated salmon the last few minutes for additional flavours to the vegetables.
Ingredients needed for this recipe:
Salmon: use a fillet with skin removed if all possible to make things a little easier
Marinade:
- lemon juice
- extra virgin olive oil
- garlic
- dried oregano
- fresh ginger
- fresh rosemary
- Himalayan salt
- black pepper

Grilled Mediterranean Salmon Kabobs with Dill Tzatziki Sauce

- Indoor or Outdoor Grill
Ingredients
- 1 lb salmon fillet, skin removed
- 1/2 lemon juice
- 4 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp fresh ginger, minced
- 1 tsp fresh rosemary, chopped extra for garnishing
- 1/2 tsp Himalayan salt
- 1/4 tsp pepper
Instructions
- Remove the skin of the salmon with a sharp knife, and cut salmon into1 inch cubes.
- In medium bowl, whisk together lemon juice, olive oil, garlic, oregano, ginger, rosemary, salt and pepper.
- Add the cut salmon cubes and blend marinate over salmon until well coated. Marinate for 15-20 minutes. The last 5 minutes add vegetables of your choice to the salmon, coating them with the marinade.
- Heat grill, while grill is heating, arrange and thread the salmon and vegetables onto skewers and place on an oiled hot barbecue or indoor grill for approximately 8 minutes, turning once halfway.
- Remove the salmon skewers from the grill and serve it own it own or on a bed of rice, or roasted potatoes.

In medium bowl, whisk together lemon juice, olive oil, garlic, oregano, ginger, rosemary, salt and pepper. Remove the skin from the salmon fillet and cut the salmon into 1 inch cubes.

Add the salmon cubes and gently stir and coat the salmon with the marinade. Cover and refrigerate for 15-20 minutes. The last 5 minutes, remove from the refrigerator and add vegetables of your choice to the salmon, coating them with the marinade.

Heat grill, while grill is heating, thread the salmon and vegetables onto skewers and place on a barbecue or indoor grill for approximately 8-10 minutes, turning once halfway. Serve it with Dill Tzatziki Sauce and garnish with fresh rosemary.
