Grilled Turkey Sausage Kabobs with Vegetables

These grilled garlic turkey sausage kabobs with vegetables have lots of flavour, are so easy to make, are healthy and dress up a plate beautifully. I used vegetables I had on hand, and tend to be summer flavours for grilling. However, the options are always open to your own personal choice. I find zucchini, peppers, onion, and tomatoes hold well for grilling. 

This unique healthy meal has flavour and is super easy to make when you can’t decide what to make for dinner. 

Options for the kind of sausage you want to include are endless. Today, there are pork, beef, lamb, turkey, and chicken sausages to choose from, but it doesn’t stop there! The choices of spices, herbs, onions, garlic, vegetables, and cheeses, gives the sausage so much flavour to personalize one’s likes.

Ingredients
  

  • 4-6" links garlic turkey sausage, cut into 1 inch pieces
  • 1/2 red onion, cut into 1 inch pieces
  • 1/2 red pepper, cut into 1 inch pieces
  • 1/2 yellow pepper, cut into 1 inch pieces
  • 12 cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • salt and pepper
  • 1/4 cup fresh parsely, chopped

Instructions
 

  • If you are using wooden skewers, soak them in water for at least 15-20 minutes. Otherwise, preheat grill to medium-high heat.
  • In a medium bowl, add the cut vegetables, tomatoes,olive oil, oregano, garlic powder, salt and pepper. Toss until coated. Begin threading through alternating the vegetables and sausage.
  • Add to the hot grill, turning a couple of times, about 5-7 minutes of each side, until you notice the sausage starting to turn brown and vegetables are grilled.
  •  Serve the kabobs with basmati rice, salad or roasted potatoes and garnish with parsley.

After tossing the vegetables in olive oil, oregano and garlic powder, salt and pepper, arrange the cut sausage and vegetables on the skewers, alternating with the cut sausage, and vegetables. Just to note, start and end with a vegetable, that way the sausage has less chance of sliding off and the vegetable holds the sausage in place. 

Serve these delicious grilled kabobs with basmati rice or roasted potatoes or a simple salad.
