Healthy Strawberry Oatmeal Bars

These strawberry oatmeal bars are healthy and so delicious with gluten-free oatmeal crumble and the strawberries are natually sweeten with maple syrup. A perfect treat for breakfast, afternoon snack or dessert with ice cream or yogurt. 

When summer has officially arrived I know I can expect to see many strawberry stands at the local markets. I love this time of year to embrace the fresh local fruit and to try new recipes and make those traditional recipes we always look forward to! Whether you simply make a dessert or add a few dollops of ice cream over the strawberries, it really doesn’t matter as long you are enjoying every bite!!  

EASY STRAWBERRY OATMEAL BAR RECIPE

All this recipe requires is to mix all of the ingredients into ONE bowl and no other equipment needed. The end results are the BEST strawberry oatmeal bars!!

WHY IS IT THE BEST STRAWBERRY OATMEAL BARS? There is very little sugar added to the crumble mixture and the oats are gluten-free for those who are sensitive to gluten. The best part is the fresh strawberries are naturally sweet so why not add a healthy version of sweetness and that being…maple syrup!  

The crumble is slightly chewy and crunchy with a hint of sweetness and since the strawberries are local and fresh, they are sweet and once the maple syrup and lemon juice are added, they simply enhance the flavours of the strawberries. These bars are perfect for on the go breakfast, a mid-day snack or enjoy it as a dessert with ice cream or plain Greek yogurt. 

INGREDIENTS FOR THESE DELICIOUS STRAWBERRY OATMEAL BARS

OATMEAL-FLOUR CRUMBLE: you will need flour, oatmeal, brown sugar, salt and unsalted butter. 

FILLING: strawberries, lemon juice, maple syrup, starch and cinnamon.

SUGGESTIONS FOR THIS RECIPE

CRUMBLE: I used gluten-free rolled oats which creates a chewy with some crunch texture. Regular quick oats can be easily substituted. Just keep in mind the texture is refined and will be slightly different, not as crunchy. The regular flour can be easily substituted for gluten free almond flour, oat flour or buckwheat flour. 

FILLING: I only use arrowroot starch and cornstarch can be option to use for this recipe. As well, I would recommend using fresh strawberries for flavour and soft texture.

HOW TO MAKE THESE DELICIOUS BARS

  1. Preheat oven to 350℉. Line pan with parchment paper, cutting to fit with two opposite sides overlap making it easier to remove from pan.
  2. In a large bowl, combine flour, oats, brown sugar and salt. Mix in melted butter to create a crumble texture.
  3. In a large bowl, add the diced strawberries, lemon juice, maple syrup, starch and cinnamon. Gently mix together until the strawberries are well coated.
  4. Press 2/3’s of the oat-flour mixture evenly into the square pan. Pour and layer the strawberry mixture and lastly crumble the remaining oat-flour mixture evenly over the strawberry mixture.
  5. Bake for 35-40 minutes in the preheated oven. Allow to cool completely at room temperature. Cut into 9 equal squares and enjoy!

These beauties can be left at room temperature for 2-3 days and then refrigerate in a container with a lid for up to a week. They can be frozen for up to 4 months.

Ingredients
  

  • 1/2 cup unsalted butter, melted
  • 3/4 cup flour (can substitued with oat or almond flour)
  • 1 cup old-fashion organic rolled oats, gluten free
  • 1/4 cup brown sugar
  • 1/2 tsp Himalayan salt
  • 2 cups fresh strawberries, hulled and roughly diced
  • 2 tsp lemon juice
  • 2 tbsp maple syrup
  • 1 tbsp arrowroot starch or cornstarch
  • 1/4 tsp cinnamon
