Hungarian-Style Creamy Baked Cauliflower with Bacon (Sült Karfiol Szalonna)

This delicious nutrient rich cauliflower side dish is so flavourful with intense smoky bacon bites throughout and coated with creamy sour cream mixture. Garnished with fresh dill that balances the flavours perfectly.

What a great way to serve up a cauliflower dish! Cauliflower is a vegetable that is often used in Hungarian cuisine, and there are several traditional ways they would use this healthy vegetable, whether it’s soup, stew, deep fried, or side dish, they ensure they include lots of flavourful ingredients. Bacon, sour cream and dill are ingredients often used when creating recipes, not to mention the national spice, paprika! This healthy side dish doesn’t lack luster. It is bold in flavour, crunchy in texture, and creamy throughout. 

Recipe Ingredients:

  • cauliflower: use a medium cauliflower head for this recipe
  • butter
  • salt and pepper
  • bacon: butcher’s bacon
  • shallot
  • milk: organic milk product or regular 2% or 3% milk 
  • sour cream
  • flour
  • bread crumbs
  • fresh dill 

Helpful Suggestions:

I would recommend purchasing butcher’s bacon at a local butcher shop or meat deli. This cut of bacon is thicker then what you buy in the grocery store, and has a bold smokiness taste. If you are unable to buy this type of bacon, then I would suggest to add another slice of bacon to the recipe.

Sour cream is so often added in many Hungarian recipes, however, you can easily substitute Greek yogurt for sour cream. Both are equally creamy and flavourful. 

Either regular bread crumbs or panko bread crumbs can be used for this recipe. The panko bread crumbs will add a little more of a crunchy texture.

Ingredients
  

  • 4 cups cauliflower, cut bite-size florets (1 medium head)
  • 1 tbsp butter, melted
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 bacon, cut into strips
  • 1 shallots, finely chopped
  • 1/4 cup organic 2-3% milk
  • 1/2 cup sour cream
  • 1 tsp flour
  • 2 tbsp bread crumbs
  • fresh dill for garnishing

Instructions
 

  • Preheat oven to 400°F.    
  • In a medium baking dish, add and stir together cauliflower florets, melted butter, salt and pepper. Bake for 25 minutes.
  • While the cauliflower is baking, pan fry the bacon until it starts to get crispy, and transfer to a plate. Add the shallots and sauté for about 3 minutes.
  • In a small bowl, combine milk, sour cream and flour until smooth and creamy.
  • After 25 minutes, remove baked cauliflower from the oven, and add shallots, bacon and milk mixture and gently stir to coat. Sprinkle the breadcrumbs over the cauliflower and bake for another 15 minutes until golden in colour.
  • Garnish with fresh dill. Serve with poultry, pork chops, roast beef or fish dish.
