This healthy and hearty recipe takes under 30 minutes! The mild spicy garlic Italian sausage and mushrooms really makes this a winning dish that’s so delicious and special!
I used my homemade marinara sauce for this recipe or a store bought can be substituted. The sauce has the perfect consistency of texture and complements the Italian sausage, mushrooms and red peppers. I will make a huge pot of marinara sauce just so I can freeze it to have on hand for a last minute meal. With this amazing recipe, your family would think you spent hours in the kitchen. You can always double the recipe so your family can enjoy this dish for another meal.
INGREDIENTS AND TIPS:
Extra virgin olive oil: I recommend a good quality of evoo
Italian sausage: this mild spicy sausage is loaded with garlic flavour, and it compliments this dish perfectly.
Mushrooms: I prefer the earthy taste of cremini mushrooms, since they add more flavour to your dish then regular button mushrooms.
Red peppers: coloured peppers have more sweetness and flavour to your dish then green peppers
Salt and pepper: to seasoning and I prefer to use Himalayan sea salt
Parmesan cheese: creates a creaminess to this dish and add enough for garnishing
Fresh parsley: a fresh and vibrant herb to add this recipe
Pasta: my preference for this dish was penne, although, spaghetti, or rotini would be good options.
HOW TO MAKE THIS RECIPE
Start by filling a medium to large size sauce pot with water and bring water to a boil, add salt then add the pasta. Cook until al dente. Before you drain the pasta, reserve about 3 tablespoons to add to the skillet with the pasta.
Heat a large skillet at medium temperature and add olive oil. Once casings are removed from the sausage add to the skillet. Cook at medium heat for about 7 minutes until the sausage is cooked through.
Transfer the sausage onto a plate and set aside. There should be some fat reserved from the sausage, if not, then add another tablespoon of olive oil.
Add mushrooms and red pepper, sauté for about 5 minutes until the mushrooms are cooked. Add the sausage back into the skillet. Add homemade marinara sauce and stir until well blended.
Once the pasta is cooked, add to the skillet and 3-4 tablespoons of the boiling water into the skillet as well. Stir until the pasta is coated with the marinara sauce.
Garnish with Parmesan cheese and freshly chopped parsley. Serve immediately and ENJOY!

Italian Sausage and Mushroom Pasta in a Marinara Sauce

- 4-6" links of Italian sausage, casings removed
- 6-8 cremini mushrooms, sliced
- 1/2 red pepper, sliced

- 1/2 tsp black pepper
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 8 oz. pasta (penne worked really well in this recipe)
