Asparagus is one of my favourite vegetables and the anticipation when spring arrives is sometimes challenging when each time I look for it in the grocery stores or local markets and when it does finally arrive, I am a happy girl!
Over the years, we have often steamed, roasted or grilled the asparagus and added butter, salt and pepper. Maybe added some parsley as a garnish, and today, well times have changed and the options are endless!
I love this recipe for a few reasons, it’s super easy and by adding a few ingredients with such distinct flavours that balances each other perfectly which makes this dish a winner!
The combination of fresh, citrus and tangy flavour enhances the flavours of the creamy goat cheese and herbs. Serve this delicious side dish with grilled meats, fish or poultry.
RECIPE INGREDIENTS
Asparagus: whenever you are steaming, roasting or grilling asparagus, they should be uniform in size so you don’t have overly cooked stems and others undercooked. Follow exactly the cooking time for best results.
Extra virgin olive oil: if you know me by now, I will always recommend a good quality extra virgin olive oil that is cold pressed. Lemon juice and zest: is one of my favourite ingredient I like to add to my recipes if I can! It’s flavourful, fresh, tangy and lemon enhances the ingredients it is cooked with.
Herbs: I added dill and parsley to this recipe, both offer fresh, earthy and minty flavours and are so healthy for us!
Seasonings: salt and pepper
Goat cheese: is perfect for this dish, it is creamy, rich and mild taste with a slight tangy overtones
HOW TO MAKE THIS DELICIOUS DISH
First make the lemon and herb mixture by whisking together the extra virgin olive oil, lemon juice, dill, and parsley, the add salt and pepper to taste. Set it aside.
Soak the asparagus in a lukewarm water with some salt. Then helps to remove any dirt that my be embedded into the stem tips. Then once the asparagus are steamed, drizzle the lemon and herb mixture it over the warm asparagus. Then add the dollops of goat cheese. Garnish with dill and lemon zest. Enjoy!
This delicious side dish would be a perfect pairing with grilled meats. Baked or pan-seared fish or seafood, also with poultry.

Lemon Dill Asparagus with Goat Cheese

Ingredients
- 1/2 lb fresh asparagus
- 3 tbsp extra virgin olive oil plus extra for drizzling
- 1 tbsp lemon juice
- 2 tbsp parsley, chopped
- 3 tbsp fresh dill, chopped plus extra for garnishing
- pinch of salt
- pepper
- 1 tsp lemon zest
- 2 oz goat cheese, crumbled
Instructions
- In a small bowl, whisk together olive oil, lemon juice, parsley, and dill, then add the salt and pepper to taste. Set aside.
- I like to soak the asparagus in a lukewarm bath water with some salt for about 3-5 minutes, this helps to remove any dirt that may get lodge in to the stem tips. Using a large steamer pot, add water to the pot and place the asparagus in the basket. Bring water to a boil, steam the asparagus for 5 minutes. They should be still crunchy and still have that vibrant green colour.
- Remove asparagus from basket and place on serving dish. Pour the lemon and herb mixture over the asparagus. Add goat cheese and drizzle with olive oil. Garnish with lemon zest and fresh dill.
- Serve with grilled meats, fish and poultry.
