These scrumptious oatmeal cookies are a perfect cookie with a crunchy exterior and a soft yummy oatmeal centers. Make them as a snack or enjoy them as an ice cream sandwich treat.
These oatmeal cookies are the ultimate oatmeal cookie flavour that are crunchy on the outside and moist centers to make a perfect combination cookie. It is not overly sweet but enough sweetness to enjoy on it’s own or as an ice cream sandwich. Oatmeal Ice Cream Sandwich Cookies

- 1 1/2 cups organic old-fashion oats
- 3/4 cup organic all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter, room temperature
- 1/4 cup brown sugar, packed
- 1/4 cup raw sugar
- 1 large egg
- 1/2 tsp pure vanilla extract
Instructions
- Preheat to 350°F. Line a baking sheet with parchment paper.
- Mix together the first 5 ingredients in a medium bowl.
- Beat butter in a large bowl until fluffy with an electric mixer. Add both sugars; beat until well blended. Beat in egg and vanilla.
- Stir in dry ingredients and mix until combined. Using an ice cream scooper or two tablespoons and drop scoops onto baking sheet, spacing cookies 3 inches apart and flatten to 2-inch rounds.
- Bake cookies 12 minutes or until golden. Remove and allow to cool on a wire rack.
- Once cooled, scoop vanilla ice cream or maple walnut and place in the center of the cookie and take another cookie and place on top and press gently.

How to make this recipe:
Cream the room temperature butter with both sugars until light and fluffy with a electric mixer. Add the egg and vanilla. Either at a low speed, or by hand stir in the dry ingredients and mix together until combined. Overmixing isn’t required.
Using an ice cream scoop or a tablespoon to drop the cookie dough on a baking sheet lined with parchment paper. Keeping in mind to place them 3 inches apart. Flatten them with a bottom of a glass to 2 inch rounds.
