Pineapple Mint Salsa

This fresh pineapple mint salsa has texture, colour and lots of flavours that reminds you of summer on the Mediterranean shores. It has the sweetness of pineapple, and the mint gives this salsa the cool fresh taste which offers that extra boldness to any grilled meat or fish.

Ingredients
  

Makes: 2 1/2 cups

  • 2 cups pineapple, diced
  • 1/2 cup red pepper, diced
  • 4 tbsp shallot, finely chopped
  • 1 1/2 tbsp fresh mint, finely chopped
  • 1 tbsp apple cider vinegar
  • 2 tbsp honey

Instructions
 

  • In a medium bowl, blend thoroughly together diced pineapple, red pepper, shallots, mint, apple cider vinegar and honey.
  • Refrigerate until ready to serve. Allow a minimum of 2 hours before serving, or can be made the morning of serving this salsa to allow the flavours to blend.  
  • Serve with grilled meats or fish as a side.

In a medium bowl, add all of your ingredients, and mix thoroughly to blend the flavours well. Refrigerator for a minimum of 2-3 hours. I find the longer it has a chance to marinate together, the better the flavours. You can prepare this salsa the morning of and serve it that same evening. 

Serve this lovely fresh pineapple mint salsa with any grilled meats or white fish. It would be a perfect accompaniment with lamb chops or kabobs.
