Pork Loin Roast

This simple delicious Pork Loin Roast recipe is seasoned with fresh sliced garlic and insert into the roast to maximize the full flavour of garlic. Coat the surface with olive oil, and rub Himalayan salt, black pepper, and sweet paprika over the roast.  

This tender pork loin roast would make a perfect dinner gathering. All it takes is about an hour from start to finish. Just add white potatoes and sweet potatoes around the roast and a vegetable, broccoli or brussel sprouts would complete this dish. The apple sauce is a perfect compliment to any pork dish.

I chose a pork loin roast for this recipe. It is a much leaner cut of pork when making a meal like this. It has very little fat, but enough that the meat is still very moist and flavourful. The few seasonings I added to this roast made it so delicious!

Ingredients
  

  • 1 1/2 lb Pork Loin Roast
  • 1-2 clove garlic, sliced
  • 2 tbsp olive oil
  • 1 tsp Himalayan salt
  • 1/4 tsp black pepper
  • 1/2 tsp sweet paprika
  • 1 cup water

Gravy

  • 2 tsp tapioca flour
  • 2 tsp water

Instructions
 

  • Remove the roast from the refrigerator 30 minutes prior to roasting.
  • Preheat oven to 450 F. Rub 1 tbsp of the olive oil on the roast. Make slits along the top of the roast and insert the slices of garlic.
  • Mix together in a small bowl salt, black pepper and paprika. Rub the seasoning mixture at the top, and sides of the roast.
  • Place the roast in the oven for 15 minutes at 450 F then turn the oven down to 350 F. Add the white potatoes and sweet potatoes around the roast. Season with salt and pepper and scatter pieces of rosemary on the potatoes. Add about 1 cup of water.
  • Cook for another 40 minutes. Remove roast from the oven and cover with foil. Allow the roast to rest 10-15 minutes.
  • Turn the temperature of the oven to 450 F for another 15 minutes to roast the potatoes.
  • Slice the roast and season potatoes if needed. Serve and enjoy!
  • To make gravy: remove liquid from roasting pan and add to a small sauce pot. Bring liquid to a boil and add the tapioca flour and water mixture. Continue boiling until the gravy thickens.

Rub the seasoning on the top and sides of the roast. Insert slices of garlic by making slits into the meat. Take the time and effort to brown the top of the roast to give it that extra crunch and flavour to the roast. Add enough water under the potatoes to avoid them drying out. Depending on the size of your pan, you may need to add more than a cup. 

Enjoy this Pork Loin Roast with roasted white potatoes and sweet potatoes. Other options you could consider are mashed potatoes, brussel sprouts, broccoli or a green salad.
