Smoked Sausage, Potatoes and Goat Cheese Frittata

This simple one-skillet meal is packed with flavour and perfect for a Sunday brunch! It’s layered with Hungarian smoked sausage, crispy potatoes, caramelized onions, heirloom cherry tomatoes, red pepper, goat cheese and topped with fresh dill.

If you have never made a frittata, you are in for a pleasant surprise! It’s easy with a few ingredients and the possibilites are endless and with this recipe, all I did was open my refrigerator and looked into my pantry to find ingredients that would make a delicious, healthy and hearty meal. Serve this delicious frittata for breakfast, brunch or any meal for that matter. It’s that satisfying and perfect for a crowd! 

RECIPE INGREDIENTS

Eggs: I used large eggs and if you don’t have large eggs, medium instead then add another extra 1-2 eggs

Heavy cream: works well for a frittata but you can always use half and half cream; milk tends to make it watery

Seasonings: salt and pepper

Filling: smoked Hungarian sausage, onion, potatoes, red pepper and heirloom cherry tomatoes

Cheeses: goat cheese and mozzarella or cheddar

Herbs: dill and parsley   

WHAT IS A FRITTATA?

Frittata was first originated in Italy and it’s an egg-based dish, similar to an omelette or a crustless quiche. It may have been first orginated in Italy, but today, there are so many variations from all over the world which makes this delicious egg dish so popular. 

It was known when you would make this egg dish it was with leftovers you would find in your refrigerator. However, your homecooks and chefs now create this dish with unique and creative ingredients and flavours. So the possibilities are endless and there is no boundaries only to keep in mind what flavours work together the best and it’s the same techniques you would use when you create a recipe. 

WHAT MAKES THIS FRITTATA SO DELICIOUS

It all starts with the ingredients and in this recipe I had some Hungarian smoked sausage in the my refrigerator and it is so similar to what my Dad would make for breakfast. He would toss in the smoked sausage into a skillet, added onions and then whisk some eggs, poured it into the skillet, put the lid on and allow the stove top to cook the eggs. I have to say it was soooo delicious!! 

So with that said, yes any sausage for that matter would add lots of tasty flavour, whether you slice it or remove the casing and fry it. 

Caramelized onions and pan fried diced potatoes are yummy all on their own, but when both are sautéed in the same pan as the smoked sausage will add so much flavour. 

The red peppers and heirloom cherry tomatoes are perfect both in their fresh flavours, colours and they balance the rich smoked sausage flavour. 

When adding cheese to any dish it will add so much texture, flavour and yumminess. In this case, I added just the right amount of goat cheese and mozzarella.

Lastly, the fresh dill and parsley both compliment this frittata. 

HOW TO MAKE THIS DISH

On medium-high heat, pan fry the sausage in a cast iron skillet or oven-proof skillet until slightly crispy, remove and transfer to a plate. Add onion and potatoes, sauté for 8-10 minutes until the onions are caramelized and potatoes are crispy. Then add red peppers, tomatoes and return the sausage back into the skillet.

Pour the egg mixture into the skillet and add dollops of goat cheese and dill throughout the frittata. Bake in the oven at 400°F for 15 minutes, or until golden around the edges. Allow to sit for 5 minutes, then serve while hot.

STORING

For any leftovers, place in the refrigerator in an air-tight container for 2-3 days. Frittata’s freeze really well, keeping their texture and flavour. Do the same by placing it in an air-tight container for up to 1-2 months.

Equipment

  • 8-9 inch cast iron skillet or oven proof skillet

Ingredients
  

  • 6 large eggs
  • 1/3 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3/4 cup smoked Hungarian sausage, sliced
  • 1/2 onion, chopped
  • 1/2 cup potatoes, diced
  • 1/4 cup red pepper, diced
  • 1/2 cup heirloom cherry tomatoes, cut in half
  • 2 oz goat cheese, crumbled
  • 1/2 cup cheddar or mozzarella cheese, grated (optional)
  • 2 tbsp dill, chopped, extra for garnishing
  • 1 tbsp parsley, chopped for garnishing

Instructions
 

  • Preheat oven to 400°F.
  • In a large bowl, whisk together eggs, heavy cream, salt and pepper. Set aside.
  • On medium-high heat, pan fry the sausage in a cast iron skillet or oven-proof skillet until slightly crispy, remove and transfer to a plate. Add onion and potatoes, sauté for 8-10 minutes until the onions are caramelized and potatoes are crispy. Then add red peppers, tomatoes and return the sausage back into the skillet.
  • Pour the egg mixture into the skillet and add dollops of goat cheese and dill throughout the frittata.
  • Bake in the oven for 15 minutes, or until golden around the edges. Allow to sit for 5 minutes, then serve while hot.
  • Garnish with remaining dill and parsley. Serve with salad or vegetables.

    THIS IS WONDERFUL, SO EXCITED TO HAVE THIS RECIPE. ALTHOUGH I DON’T HAVE THE WONDERFUL HUNGARIAN SAUSAGE (KOLBÁSZ) THE SAUSAGE FROM MY SON’S PIGS WAS ALSO A WONDERFUL ADDITION AS WOULD SMOKED BACON. IT IS PRETTY AS WELL.
