A decadent chocolate cake that taste like a brownie, and yet the texture is very much like a cake. This recipe is so easy to make that you can involve your kids and they will love it!
The chocolate cake recipe is a perfect beginner’s recipe. If you have never baked anything before or if you have a child who is eager to make something, this recipe is for you!
What I really like about this recipe is so moist and not overly sweet. I first found this recipe many years ago while I was teaching, and made a slight change. This was the first recipe I had my students make who had never been in the kitchen before. It was a perfect recipe choice to learn how to measure properly and all the ingredients are mixed in one baking pan. They were thrilled to see what they made actually turned out! Many of them, went home that same day and made it for their family. So if you need a quick, super easy chocolate brownie cake for dessert, this is the one! Have fun and have you kids help too 🙂
INGREDIENTS AND HELPFUL TIPS FOR THIS RECIPE
Flour: this recipe calls for all-purpose flour, however, other types can be substituted, including gluten-free
Cocoa powder: I like to use the Fair Trade cocoa powder for my baking, it’s a good quality cocoa powder
Baking soda: is a leavening agent
Salt: I use Himalayan for the taste and health benefits
Sugar: I use organic raw sugar, less processed, however, white sugar can be used
Vegetable oil: I suggest an avocado oil, safflower oil, light olive oil, or canola oil
Vanilla extract: a flavourful ingredient
Apple cider vingear: adds flavour and helps to activate the baking soda
HOW EASY IS THIS RECIPE YOU ASK.....
- Gather your ingredients and have them all accessible.
- You will need an 8″x 8″ or 9″ x 9″ square baking pan, and NO greasing required.
- Start adding your dry ingredients directly into the baking pan.
- Whisk in your liquids EXCEPT the apple cider vinegar. DON’T OVERMIX.
- Gently stir in the apple cider vinegar at the end until it is thoroughly blended into the batter.
- Bake for 25-30 minutes! That’s it!!!
- NO electric mixer NO bowls, only measuring cups and spoons. A GREAT RECIPE FOR KIDS OF ALL AGES!!
HOW TO MAKE THIS RECIPE
Dry and wet ingredients: add all of your dry ingredients into the square baking pan/dish and mix the ingredients well before adding the wet ingredients. Pour all the wet ingredients into the baking pan/dish and mix with a fork or wire whisk blending well without overmixing.
Final step: Once the apple cider is added, the batter turns lighter in colour. Continue mixing in the cider. The benefits of adding apple cider vinegar is it enhances the flavour, texture and with the baking soda it reacts as a leavening agent. Once the apple cider vinegar is mixed in thoroughly, you will notice bubbles forming. It took exactly 30 minutes for this to bake. Check the centre with a toothpick that the batter is fully baked and the sides should separate from the pan slightly.

Super Easy Chocolate Brownie Cake

- 8" x 8" (or 9" x 9") baking pan
Ingredients
- 1 1/4 cups unbleached organic all-purpose flour
- 1/3 cup organic Fair Trade cocoa powder
- 1 tsp baking soda
- 1/2 tsp Himalayan salt
- 2/3 cup organic raw fine sugar
- 1/2 cup vegetable oil (light olive oil, avocado oil, canola oil)
- 1 cup cold water
- 1 tsp pure vanilla extract
- 2 tbsp organic apple cider vinegar
Topping:
- organic powdered sugar
- raspberries, strawberries, blueberries, kiwi
Instructions
- Preheat oven to 375°F.
- Sift or stir together flour, cocoa, baking soda, salt and sugar in ungreased 8 inch square baking pan.
- If you have a 4 cup liquid measurer, then measure and stir in oil, water, and vanilla directly in the measuring cup or if not, then in a medium bowl, stir in the liquid ingredients. Then pour into the baking pan mixing into the flour mixture with a fork or wire whisk until smooth.
- Stir in apple cider vinegar just until evenly distributed. As it reacts to the baking soda, it will cause pale swirls in batter initially, but that will disappear when baked.
- Bake for 25-30 minutes, or until cake springs back when lightly pressed in centre. Cool thoroughly in pan on wire rack.
- Sprinkle the brownie with icing sugar, and serve with fruit.
