Two No-Bake Peanut Butter Honey Oat Energy Bites

These wholesome healthy no-bake Peanut Butter bites make a super easy snack for on the go. They are made with nutritious ingredients and sweetened with an incredible honey that makes them such yummy bites.   

It’s always great to have healthy snacks around when you have that craving for something sweet. You can enjoy these as a snack during the day, on the go snack or enjoy a couple for breakfast. 

I have two recipes here and they are similar, yet a few ingredients that make them taste differently. You ask what makes them different, well, one of them have chocolate chunks, cinnamon and dried wild blueberries. The other has nuts and dried fruit. But the beauty of making such snacks is you can play with the ingredients and add your favourite.   

When making this recipe:

I like to use as much organic products as I can when I make my recipes for personal reasons. A lot of the time, you can find these products on sale, so just keep an eye out when you go shopping. However, it isn’t necessary when it comes to making these bite snacks. 

I used peanut butter for both of these recipes and walnut, almond or cashew butter can be easily substituted. It all depends on the flavours you want to achieve.

Ingredients
  

Peanut Butter Honey Oat Chocolate Cinnamon Bites:

  • 1 cup organic quick oats or old fashion-oats
  • 1/4 cup organic peanut butter
  • 1/4 cup Chrisopigi pure honey
  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp ground flaxseed
  • pinch of salt
  • 1 tsp pure vanilla extract (optional)
  • 1/4 cup dark chocolate, small chunks
  • 1/4 cup organic dried wild blueberries and tart cherries, chopped
  • 1/2 tsp cinnamon

Peanut Butter Honey Oat Nut and Dried Fruit Bites:

  • 1 cup organic quick oats or old fashion-oats
  • 1/4 cup peanut butter
  • 1/4 cup Chrisopigi pure honey
  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp ground flaxseed
  • pinch of salt
  • 1 tsp pure vanilla extract (optional)
  • 1/4 cup organic dried fruit, chopped (wild blueberries, tart cherries, cranberries)
  • 1/4 cup nuts, pecans, walnuts or hazelnuts

Instructions
 

  • Set peanut butter out at room temperature for about 20 minutes so it has a chance to soften.
  • For both recipes, in a medium bowl, add and mix all of the ingredients until they are completely combined. Cover bowl and place into the refrigerator for about an hour, until the mixtures are firm.
  • Once you remove them from the refrigerator and they will be crumbly, use the warmth of your hands to bind the mixtures. You can add a few drops of almond, oat or coconut milk to help form them into balls. Use a ice cream scooper and shape dough into evenly size balls. Place on parchment paper or a glass dish and place into the refrigerator for another hour or until firm.
  • Store snack bites into air-tight container and refrigerator. Stores in the refrigerator for up to 2 weeks, if they last that long or can freeze up to 3-4 months.

Blend all of the ingredients thoroughly and shape them into bite-size balls. Chill them for about an hour. These fun snack bites can be eaten anytime of the day!
