This one-pan chicken recipe is bursting with flavours! The tender and juicy chicken breasts are coated in a refreshing citrusy lemon and orange sauce, along with the pungent flavour of ginger and natural sweetness of honey, works in perfect harmony . An easy one-pan recipe ready in 30 minutes!

Spring has sprung and let’s bring the outdoors in! A few daffodils have emerged, grass is getting greener, but our days are few and far between feeling like it is spring. However, this won’t stop me from making these light, refreshing and robust flavours of spring.
This simple recipe is rich with the warm medicinal ginger and garlic that balances perfectly with a few ingredients and the fresh lemon and orange flavours bring it all together in just 30 minutes. It is a perfect weekday meal!
INGREDIENTS AND TIPS
- CHICKEN BREASTS: I used skinless, boneless chicken breast fillets, these are already precut and don’t require slicing a chicken breast in half. Instructions below for chicken fillets in my recipe.
- SEASONINGS: Himalayan salt or a form of sea salt is my preference and pepper
- UNSALTED BUTTER: is my preference when it comes to managing salt content.
- EXTRA VIRGIN OLIVE OIL: I like to use a good quality evoo for my recipes, Italian, Greek or Spanish olive oils are excellent choices
- GINGER: I used fresh ginger for it’s pungent and medicinal purpose and if you don’t have fresh, then add 1/4 teaspoon of powdered ginger can be substituted
- CITRUS: lemon juice and orange juice, I don’t suggest to use bottled juices, as they have added sugars, fresh is best!
- COCONUT AMINOS: is a low sodium and sugar option from soy sauce
- HONEY: I prefer to use a local honey
- PARSLEY: is added for garnishing and taste

What is great about this recipe, the pungent ingredients of fresh ginger and garlic really makes this dish stand out! A tablespoon of ginger sounds like a lot but it actually doesn’t overpower this dish. Pan-seared chicken is quick and the results are a juicy and tender. Then allowing the chicken to simmer in this robust sauce, creates the most lovely delicious outcome that is simply outstanding!

HOW TO MAKE THIS RECIPE


If the chicken fillets are not pre-cut, then place each chicken breast between 2 sheets of plastic wrap and pound chicken to about 1/2 inch thickness using a meat mallet or rolling pin. Season with salt and pepper.
In a small bowl, combine lemon juice, orange juice and soy sauce. Set aside.
Heat a large skillet or cast iron pan over medium heat and add butter and olive oil. Once butter is melted, then add chicken to the pan, and cook for 3-4 minutes on each side. Transfer to a plate.
Add garlic and ginger, cook for about 1 minute until the aroma releases. Stir in honey, then add the citrus and soy sauce mixture. Bring to a boil, then reduce heat and return the chicken breasts back into the skillet. Simmer for 5 minutes until the chicken has heated through and cooked. Finally, check the seasoning and adjust if necessary.

SUGGESTION is to avoid over cooking in the last few minutes. When the chicken breast are returned to the skillet, all you need is 5 minutes to heat up them up. Overcooking can result in dry chicken breasts and you loose a lot of your citrus ginger sauce.

WHAT TO SERVE WITH THIS DELICIOUS CITRUS HONEY GINGER RECIPE….well here I decided to serve it will brown rice and a simple spinach salad. A simple lemon pasta, roasted potatoes, jasmine or balsamic rice, Asparagus and Avocado Orzo Salad or Orzo Summer Salad with Roasted Vegetables are great options!
STORE chicken in an airtight container in the refrigerator for up to 3 days. Also, these chicken breast freezes well for up to 2 months in a freezer safe airtight container.
